One of my new year’s resolutions for 2012 is to be less lazy. I know that is a super broad “goal” but one way I am trying to be less lazy is by making home-cooked meals at least 4 times a week. And I mean real home-cooked, not freezer pizzas or microwave meals. Pinterest has been a huge help and inspiration. Making dinner is more fun if I get to test out yummy new recipes!
"Skinny Chicken Spinach Alfredo Pizza" from letsgetcookingblog.com (found on Pinterest).
The other reason I have been making more of an effort to make dinner is because it has made a difference in our family. Everyone is happier if we are able to sit down and eat dinner as a family. Matt specifically has said that he really looks forward to dinner time with us and being able to just enjoy family time with no distractions. And he likes my cooking!
"Deep Dish Chicken Pot Pie" from my Better Homes and Gardens cookbook made with the leftover roasted rosemary chicken I made Sunday night. Regan was a huge fan!
We have made it a goal as a family to invite friends over for dinner at least every other week so we can get to know people in our ward, it is a lot of work but we have so much fun! I really enjoy cooking and I have definitely improved a lot over the last couple of months. Sometimes I don’t have the motivation or I feel like I don’t have the time to make dinner, but I am always glad when I do because it is always worth the effort.
